Dr. Bhunia is the head of Molecular Food Microbiology laboratory at Purdue University. He is a leading scientist in the area of food microbiology and food safety. His research includes understanding the molecular mechanism of host-pathogen interaction in intestinal epithelial cells during intestinal phase of infection in cell culture and animal models, strategies to prevent or eliminate enteric pathogen colonization in the gastrointestinal tract utilizing probiotic bacteria and rapid detection and molecular characterization of bacterial strains. Dr. Bhunia is a University faculty scholar and received numerous
national and international awards and honors.

Dr. Hamaker is an internationally known researcher in the area of food science and nutrition from Purdue University. He is considered as an authority in cereal science, prebiotics and dietary fiber research world over. His research covers a broad spectrum of area which include carbohydrates and health, influence of dietary fiber as prebotics on inflammatory bowel disease and colon cancer, the importance of the intestinal ermentation pattern, cereal starch and protein structure-function relationships, cereal chemistry and processing. Dr. Hamaker is a distinguished chair professor and received numerous national
and international awards and honors.

Dr. Metzger is the Alfred Chair in Dairy Education at South Dakota State University and the Director of the Midwest Dairy Foods Research Center. His expertise is in the area of structural and functional roles of components of cheese and fermented milks. Dr. Metzger was recognized by the American Dairy Science Association with the ADSA Foundation Scholar Award for his outstanding research work.
